You didn't say how the lemon pie turned out, but I simply start with a Jello Pudding and ADD some fresh lemon juice and zest - OMGoodness - it's delicious. I usually put it in a graham cracker crust. Makes me hungry just thinking about it. This year, to my surprise, I served it without meringue and WITH sweetened whipped cream.
